Andhra Chicken Fry
A simple & quick chicken dry fry

Andhra chicken fry is a dry chicken recipe which is quite popular in most of andhra restaurant as well as homes .This recipe is quite spicy (hot) but you can adjust the spiciness as per your taste.During our stay at Vijayawada this is one of our favorite recipe in restaurant . So today I am going to share with you my way of making this very simple, quick & delicious chicken fry recipe .

Ingredients
Boneless chicken (small chunks) - 450 grm
Curry leaf - 2 sprig
Green chilli - 3
Onion - 1 large
Ginger garlic paste - 1 tbsp
Bay leaf -1~2
Clove - 3
Turmeric powder - 1/4~1/2 tsp
Red chilli powder to taste
Kashmiri red chilli powder - 1/4~1/2 tsp
Corriender powder - 1.5~2 tsp
Garam masala powder - 1/2 tsp
Black pepper powder - 1/2 tsp
Lemon juice - 1/2 of a lemon
Salt to taste
Oil for cooking - 3 tbsp
Corriender leaf
Procedure
Step 1
Wash the chicken properly & drain all excess water.Make sure the chicken pieces are bit small .

Step 2
In a kadai heat 3 tbsp of oil & add bay leaf ,clove .

Saute for few second . When the flavour mix with the oil take it out from the oil .


Step 3
Add finely choped onion & saute till become translusant .

When onion become translusant add ginger garlic paste & saute till raw smell go away .

Add curry leaf , green chilli (slit or cut in to half) & saute till onion slightly brown .


Step 4
Add chicken chunks & fry on low ~medium flame

Let the colour change & become white .

Step 5
Now add all spice powder except black pepper powder & mix well .

Cover it & cook on low flame . No need to add water,if the pieces are small it hardly requir any water .

You can check in between & if necessary add few spoon of water & cook the chicken until tender.

Step 6
Finally add black pepper powder , choped corriender leaf ,lemon juice & mix well .Make it completely dry .

Now the delicious Andhra chicken fry is ready to be served .
