Atta Kakara/Sweet deep fried Whole wheat Dumplings
A delicious food of Odisha
Kakara pitha is a sweet deep-fried dumplings from Odisha.Kakara can be prepared from whole wheat flour or semolina.The inside stuffing is prepared with grated coconut or crumbled cottage cheese.
Preparation Time: 15 min
Cooking Time: 45 min ~1 hr
Total time: Aprox 1 hr 15 min
Whole wheat flour- 1 glass
Water -2 glass
Fennel seed- 1 tsp
Grated coconut- 1small~ medium
Sugar as per taste
Salt- 1/4 tsp
Cardamom powder- 7~8
Black pepper powder- little more than 1/2 tsp
Oil/ ghee for deep fry
Take 1 glass whole wheat flour & mix it with 1.5 glass of water.make sure there should be no lumps.
Heat a kadai and add remaining 1/2 glass of water,salt,fennel seed,sugar as per taste. Make sure not to add too much sugar because we will add suggar in the coconut stuffing also. Here I have used aprox 4 ~4.5 tbsp.
When water start boilling add the whole wheat mixture in to it.
Mix it continiously so that no lumps will creat and will not stick to the bottom.This is the only important phase in making it.Initial point i prefer to use rolling stick for easy way of mixing. When the sonsistancy become thick slightly i use normal spatula.Beacause rolling stick give proper grip to hand for mixing smoothly & spatula helps to collect the batter mixture from the sides. The flame should be on low at this time.
After some time it will be like a dough like consistancy.If you think it is slightly sticky you can sprinkle 1 ~2 tbsp of flour and mix it. To check the right consistany of the dough apply some water on your hand and touch the dough,if it is not sticking to your hand that means the dough is ready.
Let the dough cooldown . Now we will prepare the stuffing.
Heat a kadai on low flame and add grated coconut.
Add sugar,black pepper powder,cardamom powder and mix well til the sugar disolve. The stuffing is now ready.If you want you can use half of crumbeled cottage cheese & half of coconut.Or else you can use only cottage cheese (chena) also.
When the dough is slightly cool down,we will start preparing the dumplings.
Apply some oil on your palm
Take a small portion of the dough
Use your both hand &make a smooth ball by rotating your hand.
Flatten it by pressing it
Add a good amount of stuffing and again give it a round shape and slightly press it.
In this way prepare all dumplings
Heat some oil in a kadai to fry the kakara(dumpling) .The flame shoul be on low to medium.
When oil is hot enough,fry the kakara
Slightly press it on top as we do at the time of making poori to puffed up perfectly
Fry them until golden brown in color
In this way prepare all kakara
Now atta kakara is ready to be served.
