Cashew Carrot Paneer Curry(no onion garlic)
A delicious paneer gravy
Cashew carrot paneer is easy to prepare and super delicious paneer curry. This paneer curry is without onion & garlic so that you can prepare it in any puja or festival also. Many of us have a concept that without onion garlic food may not taste good. After trying this recipee I hope you will love no onion garlic food also.Everyone in our family love this recipe.This paneer curry is my papa's fevorite recipe.Whenever I visit to my home my grand maa always asked me to prepare this recipe.And in any puja at home I always prepare this.Before marriage in any puja at home my only duty was to prepare this paneer curry & kheer and my part of work over.After marriage this paneer cury became my hubby's favorite.

Ingredients (2~3 servings)
Paneer -300 gram
Carrot -3 inch grated
Magaj/melon seed -1 tsp
Dry red chilli -2
Tomato -1 medium to large
Ginger - 1/2 inch
Cumin seed - 1/4 tsp
Kashmiri red chilli powder-1/4 tsp
Turmeric powder - 1 pinch
Corriender powder -1/2 tsp
Cumin powder-1/4 tsp
Garam masala powder -1/2 tsp
Dry kasuri methi/Dry fenugreek leave -1/2 tsp
Salt to taste
Sugar -1/4 tsp
Milk -1 cup
Oil for cooking - 1 tbsp
Soak cashew , magaj ,red chilli( remove maximum seed),cardamom for 15 ~20 minute.
In a blender make a paste of tomato & ginger.
Heat oil in a kadai/ pan and add cumin seed . let it crackle.
Add tomato ginger puree ,corrinder powder,cumin powder,garam masala powder, kashmiri red chilli powder,turmeric powder and cook well on medium flame till the raw smell of ginger go away.
Add little water and let it come to a boil and add paneer cubes and mix well
Make a paste of soaked cashew,magaj,red chilli,cardamom by adding some milk
Add in the paneer curry.add salt to taste.
In the blender add milk and pour it in the curry.and mix well.
Add grated carrot and mix well.Add sugar to balance the taste.Cook it on low to medium flame for few more minute to get your desired consistency. Do not make it very watery .It will be like a thick gravy kind of consistancy.
Crush the kashuri methi by using your palm and add it. Cover it for 5 minute and then serve.
(Note- Many people do not like raw paneer,if you want you can fry them slightly)
