A traditional Coconut pancake from Odisha
Chitau Pitha is a special rice pan cake which is being offered to Lord Jagannath on Chitalagi Amavasya/Chitau Amavasya. It is an important festival in Odisha. "Chita" or decorating Lord Jagannath's forehead with a golden mark is the main ritual of this day. In which year Chitau Amaavasya falls on Shanivar (Saturday) it is also observed as Shani Amavasya.
Chitalagi Amavasya is observed as Hariyalli Amavasya in North India, Chukkala Amavasya in Andhra Pradesh,Gatari Amavas in Maharastra & Bhimana Amavasya in Karnataka.
On this day Chitau Pitha is prepared in every Odia household. Chitau Pitha is first offered to Lord and then we all eat pitha. Chitau pitha is prepared with a batter of soaked rice and coconut. This receipe needs very little amount of oil and it is delicious and healthy. Chitau Pite is very soft, mouthmelting and spongy in texture. Many people have this pitha with some warm milk. You can call this pitha/pancake a kind of an appam.
Previously the pitha was prepared in a Palam (Clay pot) but now a days palam is not easily available so we are making in a kadai.
Soaking Time: 4~5 hrs/Overnight
Preparation time: 15 min
Fermentation time: 3~4 Hrs
Cooking Time: Approx 20~25 min
Basmati Rice - 1.5 cup
Grated coconut - 2 cup/1 medium size
Black gram - skinless/urad dal - 2 tbsp
Salt to taste
Sugar - 1 tbsp ( if you want a sweet version you can add more sugar)
Baking soda - 1~2 pinch (optional)
Soak rice & urad dal/black gram for 4 ~5 hour.
Make a fine batter of soaked rice,urad dal & grated coconut.
Keep it at room tempreture for 3 ~4 hour for fermentation. Do not keep it for a longer time period, otherwise the taste will be change.
After fermentation add salt,sugar,baking soda(optional) & water.Make a thin batter. It should be nice pouring consistancy.
Now the important part came to make a perfect Chitau Pitha without adding much oil. Here in this kadai I fried some fryums before.I just transfer the oil to another container and rinse the kadai with some water,Do not apply soap.After that the kadai will work as a nonstick kadai and without adding oil you can simply make pitha.If you do not have oil kadai or not in a mood to prepare some fryums ,than take your washed kadai,apply some oil in it and just rinse in normal water.Follow the process twice and now you are ready to make pitha. After making few pitha you can repeate the process.Apply some oil with the help of tissue papper and then sprinkle some water then pour the batter without adding any extra oil.
Pour a ladle full of batter in the kadai.Slightly rotate the kadai in a circular way,do not make it too big and thin.
Cover it.Make sure the cover should not be covering the entire kadai.
After few second remove the cover and check,once you see small holesin the pitha/pancake,cover it again and sprinkle some water to the sides of the lid & cook for 2 more minute. In the steam the pitha will cook.For that reason the cover should be slight smaller otherwise we can not able to sprinkle water and the pitha will not able to cook in the steam.
Now remove the lid and gently remove the pitha from the kadai.
In this way prepare all chitau pitha and serve it with some warm milk. As I am making on a special occasion so serving chitau pitha with some rabdi.
