Coconut cutlet/kofta curry(no onion garlic)
A traditional dish of Odisha

Coconut is an extensively used fruit in every Odia recipe as the availability of coconut is plenty in Odisha .There are many savory recipe like manda,pitha where coconut is used as a stuffing. Today I am going to share with you a curry recipe using coconut .This curry is usualy prepared during festive time without using onion & garlic .

Ingredients
For kofta/cutlet
Coconut grated - 1/2
Gram flour/besan - 3.5~4 tbsp
Turmeric - 1 pinch
Red chilli powder - 1/4 tsp
Corriender powder - 1/2 tsp
Salt to taste
For curry
Tomato - 1 large
Ginger - 1 inch
Green chilli - 1
Corriender powder - 1.5 tsp
Cumin powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Red chilli powder to taste
Salt to taste
Sugar - 1/4 tsp
Bay leaf - 1
Cumin seed - 1/2 tsp
Oil for cooking
Procedure
Step 1
In a bowl add grated coconut ,gram flour,turmeric powder,chilli powder,salt,corriender powder & mix well.



Add 3 ~4 tbsp of water & mix well. Do not add too much of water otherwise it will not bind properly .

Step 2
Take small portion & give them cutlet shape or you can make balls of it .

Step 3
In a pan heat some oil on medium flame .

Fry the cutlet on low to medium flame till golden brown .



Step 4
Now for gravy grind tomato,ginger & green chilli.


Step 5
Remove excess oil if any & keep only 2 tbsp of oil .

Add bay leaf & sugar .keep the flame low~medium .

When sugar start browning add cumin seed .

Step 6
Now add tomato puree & all spices


Let it cook till oil separates .

Add some water & add boiled potato .

Let it cook for 2 minute .

Step 7
Add enough water & let it boil.

After that add fried cutlet ,salt & mix well .

Cover it & let it cook for 5~7 minute.

Switch off the flame & garnish it with some choped corriender leaf . Keep it for 10 minute & then serve so that the cutlets will soak some gravy .

Now coconut cutlet/kofta curry is ready to be served .
