Cream Of Mushroom Soup
A delicious creamy Mushroom soup
From the name it self any one can easily guess ,this soup is a cream based soup. Cream of mushroom soup is one of my most favorite soup in restaurant . 2~3 years before I tried this soup in a restaurant & this became my favorite one .After that I decided to try this at home because it is not always possible to go to some restaurant every time & you will not get the same kind of taste in every restaurant.Nothing more delicious then home made good food .By this way you can adjust the texture or taste as per your/your family members choice . This soup is prepared with a combination of some stock(vegetable or chicken) as per choice, milk ,cream & some mushroom puree .
Preparation Time: 5~10 min
Cooking Time: 15 min
Total time: 20~25 min
Mushroom - 200 grm
Vegetable stock/water - 250 ml
Milk - 200 ml
Cream - 3 tbsp
Mixed herb - 1 pinch
Onion finely choped - 1 medium
Garlic choped - 2~3 large
All purpose flour - 1.5 tbsp
Black pepper powder - 1/2 tsp
Choped coriander leaf - 1/2 tsp
Butter - 1.5 small cube
Salt to taste
Slice all mushroom & chop onion & garlic .
Heat butter in a pan on medium flame .
Saute onion & garli for few minute till onion become soft .
Add sliced mushroom & cook till all moisture of mushroom go away .
Now take aprox 1/2 of the mushroom & with the help of a blender make a fine puree of it .
Now to the remaining half of the mushroom add all purpose flour .
Mix well & saute for few second .
Add vegetable stock slowly by mixing with all purpose flour smoothly & let it boil .
After that add milk & mix well .
Now add mushroom puree & mix well
Let it boil .
Add mixed herb & coriander leaf & mix well .
Add fresh cream & mix well .
Add black pepper powder & mix well .
Cook for few minute till it become thick .You can adjust the thickness as per your choice.
Now cream of mushroom soup is ready to be served .
