Crispy Honey Chilli Baby Corn

For an excellent starter

Crispy honey chilli baby corn is an easy to make and a delicious recipe of baby corn. It is a great starter for vegetarian people as well as for baby corn lover. It is a perfect combination of spicy and sweetness. When I made this baby corn recipe for the first time, my family member loved it and I can assure you that this can be a hit in your family and friends. Although in the name of the recipe chilli is mentioned but I have not used bell pepper/capsicum in it. If you want you can add some bell pepper to it.

Ingredients (For two full plate servings)
Baby corn - 10 to 12 pieces
Corn flour - 2 tbsp
All purpose flour - 2 tbsp
White sesame seed - 1 tbsp
Crushed/paste ginger garlic - 1 tbsp
3 to 4 chopped garlic
Vinegar - 1 tbsp
Soya sauce - 1 tbsp
Red chilli paste - 1 tbsp
Red chilli sauce 1 tbsp
Tomato sauce - 1 tbsp
Honey - 1 to 2 tbsp
Oil for deep fry
Spring onion green for garnishing
Procedure
Step I :
First of all slice the baby corns into two pieces and if the baby corns are little big in size cut them into half.

Step II :
Then blanch the baby corns (blanching mean boil the water, when the water starts boiling add the baby corns and let it boil for 1 min). Then switch off the flame and wash it in normal running tap water. Keep it aside and let it dry.


Step III :
Take the bay corns in a bowl, add corn flour, all-purpose flour, crushed ginger garlic, sesame seeds and salt to taste. Mix them well. If required add few drops of water. The barter should coat the baby corn and It should not be watery.

Step IV :
Heat oil in a frying pan. Fry the coated baby corm on low to medium flame. For the crispiness we need to fry twice. When frying for first time don't make it golden brown.

Then fry the baby corn for second time.

Never fry on high flame because, if you fry on high flame the upper side will be golden in color but the inside will not get cooked properly.
Step V :
Remove all the oil from the pan and keep only 1 to 2 tea spoons of oil in it. Add the chopped garlic and red chilli paste and saute it well.

Then add tomato sauce, red chilli sauce, vinegar, soya sauce, honey and mix well.

Now add the double fried baby corns and coat them well with the sauce mixture.

Step VI :
Now switch of the flame and garnish it with some chopped spring onion green and dry roast sesame seeds. Now your crispy honey chilli baby corn is ready to serve.

Note : For making red chilli paste, take 8 to 10 dry red chilli, soak them in hot water for 30 to 40 minutes and then make a fine paste of it.
