Dal Panchmel /Panchratna dal

A popular Rajasthani dish


Dal panchmel is a rajasthani dish . As the name suggest this dal is made with a combination of five types of dal / lentils . As this recipe is a combination of five different kind of dal so it is full of nutrition .You can have this with roti or rice .


Preparation time: 45 min ~1 hour (i.e - soaking time for dal)

Cooking Time: 15 min

Total time: 1 hr 15 min


Ingredients

  • Bengal gram/ chana dal - 1.5 tbsp

  • Moong dal - 1.5 tbsp

  • Masoor dal - 1.5 tbsp

  • Arhar dal - 1.5 tbsp

  • Urad dal/ black gram - 1.5 tbsp

  • Cumin seed - 1/2 tsp

  • Green chilli - 1

  • Dry red chilli - 2

  • Crushed ginger - 1/2 tsp

  • Turmeric powder- 1/2 tsp

  • Asafoetida - 1 pinch

  • Curry leaf - 6~7

  • Tomato chopped - 1 medium

  • Corriender powder - 1/2 tsp

  • Red chilli powder to taste

  • Cardamom - 2

  • Clove - 3

  • Black pepper - 5

  • Salt to taste

  • Ghee -2.5~3 tbsp

  • Corriender leaves for garnishing (optional)

Procedure

Step 1

Keep equal amount of dal from each .You can also use green moong dal insted of yellow .

Mix all dal except Bengal gram/chana dal .

Step 2

Soak all the dal/lentils for 45 min~ 1 hour. Soak chana dal 15 minute before or use lukewarm water . Here i soaked all the dal at same time so i used lukewarm water for chana dal,as chana dal take more time to cook .

Step 3

After 45 minute rinse all dal properly and add in the pressure cooker .

Add water (2.5~3 cup) , salt & turmeric powder and pressure cook it . One whistle on high flame then 3 minute on low flame.After that switch off the flame .

Step 4

At that time make a powder of Whole garam masala (clove,cardamom,black pepper).



Step 5

when the cooker release the pressure check the dal whether cooked or not .

Step 6

Now heat 1.5 tbsp of ghee in a kadai/pan .


Add cumin seed & asafoetida,let the cumin seed splutter.

Add red chilli & crushed ginger.Saute for few second till the raw smell of ginger go away.

Add curry leaf .

Step 7

Add tomato,green chilli, powdered garam masala & red chilli powder to taste .I have not used red chilli powder as we do not like much spicy . And green chilli have some spicyness .

Keep the flame low and cook till tomato become mushy .

Step 8

Now add the cooked dal and mix everything well .Simmer it and cook for few more minute.

Now dal penchmel is ready. Finially add some more ghee on top and add some choped corriender leaf & serve .
