Egg fry/Anda fry
A quick & delicious egg recipe
Egg fry is a quick & easy side dish that goes well with chapati or rice .This is one of my personal favorite when you want to have some good food within few time .Now I am going to share with you the delicious chatpata egg fry recipe which I learnt from my papa .

Boiled egg - 4
Onion sliced - 2 medium~large
Capsicum sliced - 1/2 of a large one
Tomato sliced(remove pulp and keep separate) -1 medium~large
Slit green chilli - 2
Ginger garlic paste/crushed - 1 tbsp
Ginger julienne - 7~8
Corriender powder - 1~1.5 tsp
Garam masala powder - 1/2 tsp
Black pepper powder - 1/4~1/2 tsp
Cumin seed - 1/2 tsp
Turmeric powder - 1/4~1/2 tsp
Red chilli powder to taste
Whole garam masala (1 Bay leaf , 3 clove , 2 green cardamom , 1 small cinnamon stick)
Tomato sauce - 1 tbsp
Salt to taste
Mustard oil for cooking
Boil eggs & keep every veggies ready .
In a kadai heat 2~3 tbsp of mustard oil.When mustard oil comes to the smoking point keep the flame low .
Add some turmeric powder,chilli powder & pinch of salt & fry the eggs by cutting them in to half .
In the same oil add bayleaf,clove,green cardamom & a small cinnamon stick .
Now add cumin seed & let it crackle .
Add sliced onion & fry till it become translusant on low~medium flame .
Add ginger garlic paste & fry till raw smell go away .
Add green chilli & tomato pulp . mix well.
Add all spice powder except black pepper powder & mix well .
Add sliced capsicum ,tomato ,ginger julienne,ketchup & salt .cook for 2 more minute. You want you can add few spoons of water if necessary .
Add fried eggs & black pepper powder .
Gently mix it & cook for few second .
Now egg fry is ready to be served. Garnish with some corriender leaf & serve hot .
