Gajar Halwa/Gajar ka Halwa/Gajrela

A classic winter special

Gajar halwa is a carrot based indian pudding which is prepared from grated carrot,milk,dry fruit & flavoured by cardamom powder.Gajar halwa is commonly prepared during winter as we find plenty of carrot & of good quality .For making carrot halwa try to use bright red carrot as they are more juicy & tender .Every winter preparing carrot halwa is a must thing to do & I love to prepare it. Starting from grating carrot to frying them in ghee is absolutely the best part & I just love the aroma of carrot when frying in ghee .The entire house smells so good .This is my 2nd batch of carrot halwa of this winter. First time I was not able to take photo so not able to share but before ending winter It is a must recipe to share .So today I am going to share with you a delicious carrot halwa recipe without using khoya or condensed milk .

Preparation Time: 20 min

Cooking Time: Aprox 1 hr

Total time: 1 hr 20 min


Ingredients

  • Carrot - 1.5~1.7 kg

  • Full fat milk - 1 ltr

  • Sugar - aprox 7 tbsp or as per taste

  • Ghee - 4 tbsp

  • Cardamom powder - 1/2 tsp (6~7 cardamom)

  • Black pepper powder - 1/4 tsp (optional)

  • Handful of dry fruit as per choice (here I used almond,kishmish, pistachio)

Procedure

Step 1

Heat milk in a wide pan on high flame .

When it comes to a rolling boil keep the flame low & let it boil till it reduced to 1/3rd of original quantity .

Step 2

At the same time wash the carrot properly

Peel it with the help of of a peeler .

Step 3

Grate all carrots with the help of a grater

Keep peeled outer skin & end part of carrot aside .You can use this for making vegetable stock .


Step 4

When milk is reduced keep it aside .

In another pan or kadai heat ghee.

When ghee is hot enough add grated carrot & mix well .

Step 5

For initial 3~4 minute you can keep the flame high & then kepp the flame low or low~medium and fry it till all moisture go away .

When moixture will go away carrot will start sticking to the pan .Now it is done & that time stop frying carrot.


Step 6

Now add reduced milk ,sugar,cardamom powder , black pepper powder & mix well .

Add choped dry fruit & mix well .

Cook on low~medium flame till it become thick .


Now gajar ka halwa is ready . Serve hot or cold as per your choice . I personally like to have after keeping for few hour in refrigerator .
