Janhi Aloo Posto/Ridge gourd in poppy seed paste(no onion garlic)


Ridge Gourd/ sponge Gourd/Turai/Chinese Okra is commonly used in Asian cooking & for healing many health problem. Many people do not realise the benefits of this neglected vegitable. Before sharing the recipe just want to share some benefits of Ridge Gourd. It is great for constipation,Lowering blood sugar,weight loss,boost the immune system,detoxing & many more.Janhi posto commonly eaten as a side dish with rice.This recipe taste greate with some steamed rice. You can have this with roti also but taste great with rice. Love to have janhi posto with some steamed rice topped with some ghee,lentil/dal,curd & salad or pampad.This dish requir very few ingredient & minimal amount of oil.

Ingredients

  • Ridge gourd- 6 small to medium

  • Potato-2 small

  • Poppy seed- 1.5~2 tbsp

  • Green chilli-1~2

  • Ginger- 1/2 inch

  • Cumin seed- 1/4 tsp

  • Cumin powder-1/4 tsp

  • Urad dal vadi/biri badi- 4~5 (optional)

  • Salt to taste

  • Oil- 1 tbsp

Procedure

Step 1

Make a paste of poppy seed,ginger,green chilli.First dry grind poppy seed


Add green chilli & ginger and make a paste by adding some water.



Step 2

Now chop ridge gourd &potato.


Peal the ridge gourd & rinse it.Never wash it after cutting the ridge gourd.

Potato pieces should be smaller then ridge gourd because ridge gourd do not take much time to cook . Always taste a very small piece of ridge gourd because if the ridge gourd is not of good quality it will taste bitter and the entire taste of the dish will change.

Step 3

Heat oil in a pan and add cumin seed and let it crackle.


At the same time roughly muddle the urad dal vadi


Step 4

Add it to the oil & fry it.


Step 5

Now add the chopped vegitables, salt & mix well.

Step 6

Add poppy seed paste & cumin powder mix well.

Add some water, cover it and cook. Do not add much water because ridge gourd will also release some water.

Cover it and cook on low flame till it is done properly.Dont make this dish very liquidy.

And Janhi aloo posto is ready to be served .
