Kanika/Sweet rice
A famous Prasad offered to Lord Jagannath at Puri Temple

Kanika is one of the mahaprasad offered to Lord Jagannath in the holy temple of Puri, located in Odisha. Mahaprasad is the term applied to the 56 food items (Chhapann Bhog) offererd to Lord Jagannath. The "Prasad" offered to Lord Jagannath and later to Maa Bimala in the Shri Mandir is know as Mahaprasad. Today I am going to share the receipe of KANIKA which is a part of Chhapann Bhog. It is an aromatic sweet rice with a perfet blend of Indian spices, sweet and desi ghee.
Preparation Time: 15 min
Cooking Time: 25 ~30 min
Total time: 40 ~45 min
Ingredients
Basmati rice- 1 small glass (aprox 150~160 gm)
Sugar - 6 ~6.5 tbsp or as per taste
Salt - 1/4 tsp
Desi Ghee- 1.5 ~2 tbsp
Bay leaf - 3
Cinnamon stick- 3 small piece (2 ~2.5 inch total)
Green cardamom- 4 ~5
Black pepper- 20 ~22( 1/4 ~1/2 tsp)
Clove -6
Nutmeg -1 small piece ( i have the nutmeg powder ,so i use that 2 pinch )
Javitri/Mace - 1/2 piece
Cashew
Raisin/Kishmish
Water - 2 small glass (rice & water ratio 1:2)
Procedure
Step 1
Wash rice properly and soak for 15 min.Than drain all excess water and keep aside


Step 2
Make a coarse powder of all whole spices. keep 1 bay leaf aside out of 3.


Step 3
In a pan heat desi ghee . Fry cashew and raisins and keep aside.


Step 4
In the same pan add 1tsp of sugar and 1 bay leaf. When sugar will get red in colour add rice to it and fry them for 2 min.



Step 5
Add water and the coarse spice powder,cashew,raisin and 1/4 tsp of salt.Mix well. When the water start boiling seamer the flame and cover it.


Step 6
Add sugar when the rice is 60~70% cooked.Mix well & cover it.

It will take 20 ~ 25 min to cook properly. After 20 ~ 25 min. the KANIKA will be ready.

Switch off the flame and now KANIKA is ready to be served.
