Kung Pao Chicken
A stir-fried chinese recipe

Kung Pao chicken is a stir-fried chinese dish made with small chunks of boneless chicken,peanuts,vegitables & chili peppers.The dish is originated fromsouth-western china.The dish includes sichuan peppercorns but i did not find that so i replace it with black peppercorn.The original recipe is spicy in taste but i adjust the amount of chilli as per our taste.The one thing I like in this recipe is the chicken chunks are shallow fried rather than deep fried like chilli chicken or any other deep fried chicken recipe.
Preparation Time: 20~30 min (marination time)
Cooking Time: 20 min
Total time: Aprox 40 ~50 min
Ingredients
Chicken boneless -350~400 gm
Capsicum- 1 small
Broccoli florets -7~8
Peanuts-2 tbsp ( can replace peanuts with cashew)
Garlic finely chopped- 1tsp
Ginger finely chopped- 1tsp
Dry red chilli-3~4
Black pepper powder- 1/2 tsp
Corn flour- 2 tbsp
Soya sauce- 1 tsp for marination & 1 tbsp for sauce mixture
Hoisin sauce- 1 tbsp
Red chilli sauce- 2 tsp
Oil for cooking
Sugar- 1/4 tsp
Salt to taste
Procedure
Step 1
Wash the chicken properly drain all water & cut int small chunks(bite size) so that chicken will be cooked properly when shallow fried.

Step 2
Add 1 tsp soya sauce,cornflour,black pepper powder,salt & mix well. Marinate for 20~30 minute.


Step 3
At that time chop the ginger,garlic,capsicum, broccoli. If you want you can add some babby corn also.Acordingly adjust other vegitables.

Prepare a sauce mixture bay mixing 1 tbsp soya sauce, hoisin sauce, chilli sauce,sugar & 1tsp of water.

Step 4
Fry the peanuts & keep aside.

Step 5
Add some oil in a pan & shallow fry the chicken chunks on medium flame till it cook properly.



Step 6
Heat 1 tsp of oil in a pan and saute chopped ginger ,garlic & red chilli

Add capsicum & broccoli and saute it

Add fried chicken chunks & mix well.

Step 7
Add sauce mixture, salt to taste & mix well.


Step 8
Add fried peanuts & mix

Now Kung Pao chicken is ready to be served.
