Lauki Musallam/Stuffed Bottle .

A delicious Mughlai lauki recipe

The term Musallam literally means 'whole' .Musallam is generally made with chicken (murg).Murg musallam is a Mughlai dish originated from the Indian subcontinent.The dish was popular among the royal Mughal family of Awadh.This Lauki musallam is a vegiterian version of it. In resturant generally lauki musallam is prepared with khoya and masala so it is very rich in taste.But when we prepare in home khoya is not always available. Here I am going to share an equaly delicious Lauki musallam with easily available ingredient. It is a stuffed lauki curry which you can have on any special occasion .

Preparation time: 15 min

Cooking Time: 20~30 min

Total time: 35 ~45 min


  • Lauki(Bottle gourd) - 1 small

  • Carrot - 1 small~medium

  • Paneer grated- 100 ~150 grm

  • Onion- 2 medium

  • Tomato- 2 medium

  • Ginger garlic paste/grated- 1 tbsp(for gravy)

  • Grated ginger- 1/2 tsp (for stuffing)

  • Green chilli chopped - 1~2

  • Cumin seed-1/2 tsp

  • Corriender powder- 2 tsp

  • Red chilli powder to taste

  • Cumin powder - 1/2 tsp

  • Yogurt - 2 tbsp

  • Cashew - 8~10

  • Magaj/melon seed- 1/2 tsp

  • Cardamom-3

  • Salt to taste

  • Sugar- 1/2 tsp

  • Oil for cooking


Step 1

Soak cashew ,magaj,cardamom

Step 2

Peal the lauki and wash it properly. Always use small size lauki.

Step 3

Cut into two half & with the help of a knife remove the inner side and make a hollow cylinder.

Step 4

In a pan boil some water.Add some turmeric powder and salt in it .Let the lauki cook in the water till soft.But not to over cook it otherwise it will not hold the stuffing.Insert a knife to check whether it is cooked or not.

Remove it from the pan.

Step 5

Now prepare the stuffing.Finely chop the removed part of the lauki.

Grate paneer,carrot,ginger & chop green chilli.

Step 6

For the stuffing in a pan add 1 ~2 tsp oil,add cumin seed & grated ginger

Add chopped lauki , green chilli and fry for 1 minute.

Add grated carrot, paneer ,salt, turmeric powder ,corriender powder (1/2 tsp) & mix well.Cook it for 1 more minute. Now stuffing is ready.

Step 7

With the help of a spoon fill the lauki.

Step 8

Add some oil in the same pan and fry the lauki by roatating it. no need to add too much of oil.

Remove it from the pan and again cut them into two half.

Step 9

For preparing the gravy,in the same pan add 2 tbsp of oil .Add cumin seed, ginger garlic paste/grated.Saute it.

Add chopped onion and saute it on low to medium flame till it become brown

Step 10

Add chopped tomato,turmeric powder,red chilli powder,salt,corriender powder(1.5 tsp),cumin powder and mix well.

Cover it and cook on low flame till tomato become soft.

Add some water ,again cover ot and cook til it become like a paste.

Step 11

Add yogurt and mix well.if yogurt is thick than whip it before adding

Step 12

Make a paste of soak cashew and add it to the gravy

Here i had some remaining stuffing, so i add it to the gravy it self. It is up to you if you want to add it or not. At this time you can adjust the consistancy of the gravy by adding some water.

Add sugar to balance the taste.

Step 13

Now add stuffed lauki,cover it and cook for 1more minute.

Garnish it with some grated paneer & now lauki musallam is ready to be serverd.

(Note- if you want you can make a stuffing of potato,green peas etc. according to your choice.)
