Methi malai paneer
Rich & creamy paneer recipe

Methi malai paneer is a creamy paneer recipe prepare with fresh methi/fenugreek leaves .The creamy gravy is prepared from onion,tomato,cashew,milk & some spices . Taste great with roti,naan ,paranthas or any other Indian breads .
Preparation time: 10~15 minute
Cooking Time: 20 minute
Total time: 30~35 minute
Ingredients
Paneer - 250~300 gram
fresh methi/Fenugreek leaves - 1 bunch (150~200 gram)
Onion roughly choped - 1 large
Tomato choped - 2 medium
Garlic - 6 medium
Ginger - 1 inch
Green chilli - 2
Cinnamon stick - 1 medium
Cardamom - 3~4
Clove - 3~4
Bay leaf - 1
Cashew - 7~8
Magaz/ musk melon seed - 1/2~1 tsp
Cumin seed - 1/2 tsp
Corriender powder - 1.5~2 tsp
Garam masala powder - 1/2 tsp
Red chilli powder to taste
Turmeric powder - 1/4 tsp
Milk - 1~1.5 cup
Salt to taste
Sugar - 1/2 tsp
Oil for cooking
Procerdure
Step 1
Wash fenugreek leaves for 2~3 times & clean properly . Chop it .

Step 2
Keep all things ready

Cut the paneer cubes acording to your choice . Grate a small portion of paneer to add in the gravy .

Step 3
Heat 1 tbsp of oil in a kadai & add methi leaves by removing all excess water


Fry it on low flame for few minute by adding a pinch of salt .When it become dry completely remove it & keep aside .


Step 4
In the same kadai heat 2~2.5 tbsp of oil on low flame .

Add cinnamon stick,bay leaf, cardamom ,clove & saute it .Add cumin seed and let it crackle .

Step 5
Add choped onion,ginger,garlic & saute it till onion become slightly soft .


Step 6
Add choped tomato & green chilli . saute for few second

Add cashew & musk melon seed and cook everything for few minute .

When everything become slightly soft switch off the flame & let it cool down

Make a smooth paste with the help of a blender .


Step 7
Now in the same kadai add the puree & cook on low to medium flame .


Add turmeric powder,red chilli powder,corriender powder & garam masala powder & mix well .

When the gravy become slightly thick & raw smell go away (if any) add fried methi leaves & mix well .



Step 8
Add grated paneer ,salt to taste & mix well .


Step 9
Add paneer pieces & mix well .

Finally add milk , sugar & mix well . Cover it & cook for 2 more minute & switch off the flame. You can adjust the thickness of the gravy acording to your choice . Also can add some cream to make it more rich but it is not that necessary .

Now creamy methi malai paneer is ready to be served .
