Mixed veg (restaurant style)

A delicious creamy vegetable recipe


Mixed veg cury is a very common dish available in most of the Indian restaurant .This curry is made with different seasonal vegetable in a onion tomato gravy .Restaurant way of mixed veg is quite creamy in texture . Here is a very simple way of making creamy mixed veg curry .

Total time: 40 min


Ingredients

  • Potato choped - 1 large

  • Paneer cube - 120~ 150 gm

  • Carrot choped - 1 medium

  • Beans choped - 10~12

  • Culiflower choped - 8~9

  • Green mattar - 1 hand full (aprox 1/2 cup)

  • Capsicum choped - 1 small

  • Onion - 1 medium

  • Tomato - 1 large

  • Ginger - 1 inch

  • Garlic - 6~7 medium size

  • Cashew (soaked in water for 15 min) - 6~7

  • Cumin powder - 1/2 tsp

  • Coriander powder - 1 tsp

  • Garam masala powder - 1/2 tsp

  • Dry fenugreek leaves(kasuri methi) - 1/2 tsp

  • Turmeric powder - 1/4 tsp

  • Kashmiri red chilli powder - 1/2 tsp

  • Salt to taste

  • Oil for cooking - aprox 4 tbsp

  • Fresh cream -1 tbsp (optional)

  • Sugar - 2 pinch (optional ,to balance the taste)


Procedure

Step 1

Chop all the vegetable in small cubes & cut beans in to 1 inch length .

Roughly chop onion , tomato,ginger & garlic . Soak cashew for 15 minute in luke warm water .

Step 2

Heat aprox 4 tbsp of oil in a pan/kadai .

Step 3

Fry the choped potato for few minute on medium or low~medium flame .No need to brown it completely .

Then fry all vegetable excluding green peas . Saute it for 1~2 minute & keep it aside .


Step 4

In the same oil add cumin seed & let it crackle .


Add onion ,ginger & garlic .

Saute on low flame till onion become slightly soft .

Add tomato & cashew .

Saute on low flame till tomato become slightly soft . Add some salt so that tomato will become soft quickly .

Step 5

Switch off the flame & let the mixture cool down for 10 minute .With the help of a blender make a smooth paste of it .



Step 6

Transfer the paste to the kadai & add all spices excluding garam masala powder & kasuri methi .

Mix well & cook for 1 more minute .

Step 7

Add green peas & mix well . Cover it & cook for 2~3 minute on low flame .


Step 8

After 2~3 minute add all fried fegetable including paneer & salt .

Mix everything well .

Step 9

Add some water,Mix it well .

Add kasuri methi , garam masala powder & mix well .

Cover it & cook for 7~8 minute on low flame till the vegitables become soft . By the time the gravy will become slightly thick .


When vegitables are cooked properly remove the lid & add fresh cream & sugar .Mix well & switch off the flame .

Now mix veg is ready to be served .Taste great with any kind of indian bread like naan , chapati ,rumali roti ,paratha etc.

Note :

  • You can also add cabbage , sweet corn ,choped babby corn , mushroom , brocoli etc .

  • To make it more healthy you can skip of frying vegitables & cook it in the gravy itself for a longer time .

  • Insted of cream you can add some milk at the end .(aprox 1/2 cup)
