Mushroom Do Pyaza
A quick dinner recipe
Do Pyaza (means two onions) is an afghan dish.Two onions does not mean two number of onion,it is prepared with large amount of onion and more importantly onions are added at two stages.Finely chopped onion to make gravy and at the last stage of cooking some more cubed onions are added. Here I am going to share very simple and quick mushroom dopiaza recipe.

Total time: 25 min
Mushroom -250~300 grm
Onion - 2 large(1 finely chopped,another cubed)
Ginger grated/paste - 1tsp
Garlic grated/paste - 1 tsp
Green chilli- 2
Tomato chopped- 2 medium
Capsicum- half cubed (optional)
Cumin seed - 1/2 tsp
Red chilli powder to taste
Turmeric powder - 1/4 tsp
Corriender powder - 1 tsp
Cumin powder - 1/2 tsp
Black pepper powder- 1/4~1/2 tsp
Salt to taste
Chopped corriender leaves
Oil for cooking - 3 tbsp
Clean mushroom & cut in to half .
Prepare all things required
In a pan or kadai heat 2 tbsp of oil and fry cubed onion till golden brown from edges.
Remove from the kadai & keep aside
Add 1 tbsp of oil,add cumin seed & let it crackled .
Add grated ginger garlic & saute for few second on low flame .
Add chopped onion & green chilli.Saute till onion become translucent or light golden.
Add chopped tomato ,some salt & all spices except black pepper powder.
Cook till tomato become mushy.
Add mushroom ,capsicum & salt to taste .Mix well on low flame
Cover it for 2 minute & mushroom will release some water.
Remove the lid and saute till the water dries up & mushrooms are cooked.Add fried onion & black pepper powder .Mix well .
Add chopped corriender leaf, mix well & Switched off the flame .
Now Mushroom Do Pyaza is ready to be served .
