A savory tea time snacks
Nimki/Namak para is a fried crunchy savoury Indian tea time snacks.Nimki is also popular in pakistan, Bangladesh & Nepal .
Preparation time: 20 min
Cooking Time: 15 min
Total time: 30~40 min
All purpose flour - 2 cup
Oil - 1/2 cup
Salt - 1 tsp /as per taste
Ajwain/Carom seed - 1/4 tsp
Kala jeera/ Black cumin seed - 1/2 tsp
Oil for fry
Add ajwain,kala jeera & salt with all purpose flour.Mix well
Add oil in it & mix very well for 2~3 minute.
The texture will be like this. When we press by using our hand it will bind properly .
By adding water make a smooth dough. Do not add much water at a time. The dough shoul not be too soft or hard .
Apply few drops of oil on it ,cover it & keep aside for 15~20 minute .
After 15~20 minute knead it again & divide in to 2 equal part .
Apply some oil on the rolling board & roll it evenly .
It should not be too thin or thick like paratha .
Make dimond shape by cutting it as shown in the picture.
Dust very few amount of flour on a plate & collect the diamond shaped pieces .In this way prepare another half of the dough & collect the pieces .
Now heat some oil in a kadai.
When oil is hot enough keep the flame low & add the diamond shape pieces to the oil & fry till golden in colour.
Collect all nimki with the help of a tissue paper to remove excess oil .
Let it cool down for some time & then serve. You can store it in a air tight container for 15~20 days .
