Rajma Masala
A popular north indian recipe

Rajma is a popular south asian vegetarian dish originated from the Indian subcontinent,consisting of red kidney beans in a thick gravy with Indian spices. It is a part of regular diet in Northern India.Rajma chawal, i.e. Rajma served with boiled rice,is a popular dish throughout northern India.
Soaking Time: 7-8 hour/overnight
Preparation Time: 15 min
Cooking Time: 15 min.
Total time: 30 min.
Ingredients (3 servings)
Rajma/ kidney beans-1.5 cup
Onion-1 medium size
Tomato-1 medium size
Garlic clove-3 big /6-7 small
Ginger- 1inch &some ginger julienne
Green chilli-2
Corriender powder-1tsp
Garam masala powder-1/2 tsp
Turmerice powder-1/4 tsp
Kashmiri red chilli powder-1/2 tsp
Hing/Asafoetida-1 pinch
Salt to taste
Corriender leaf
Butter-optional
Oil for cooking
Procedure
Step 1
Soak kidney beans overnight

Step 2
Wash properly and pressure cook it with some salt and turmeric powder .One whistle on high flame and another 6-7 min. on low flame

Step 3
In a blender add tomato,onion,garlic & ginger.make a fine paste.


Step 4
In a kadai heat 2tbsp oil. Add apinch of hing & cumin seed,let itcrackle.

Step 5
Add masala paste,turmeric powder,coriander powder,garam masala powder,red chilli powder and cook till oil separate.


Step 6
Add boiled rajma ,salt to taste, green chilli & ginger julienne.Mix well and cover it and cook for 10 minute on low flame.Mash few rajma beans with spoon .it will help to make the gravy thick.


Step 7
You can adjust the gravy as per your choice.When you achieve your desired consistency,switch off the flame.Add chopped corriender leaf & butter.

Now Rajma masala is ready to be served .You can enjoy this with rice or roti as per your choice.
