Sijha Manda/A kind of Steam modak

A delicacy of Odisha


In Odia the word "sijha" basicaly means "steam" & "manda" means dumplings which can be fried or steamed . Sijha manda is a rice flour dumpling with a sweet stuffing of grated coconut or chena/cottage cheese . Manda pitha is prepared in every part of Odisha . Any festival is incomplite without this .There are different kind of manda pitha prepared in Odisha ,both fried as well as steamed .This steamed dumpling have some similarities with modak of Maharashtra & Kozhakkattai of South India .


Soaking time -3 hr

Preparation Time: 30~35 min

Cooking Time: 15~20 min


Ingredients

  • Rice- 1 cup (aprox 150 gm)

  • Grated coconut- 1small~ medium

  • Sugar - 2 tbsp for rice flour mixture & 2.5~3 tbsp for coconut stuffing or as per taste

  • Salt- 1/4~1/2 tsp

  • Cardamom powder- 7~8

  • Black pepper powder- little more than 1/2 tsp

Procedure

Step 1

Wash the rice properly & soak for 3 hour .

Make a fine paste of it . No need to make thick paste ,make it liquidy .

Step 2

Heat a kadai on low flame and add grated coconut. Fry for 1~2 minute .

Add sugar,black pepper powder,cardamom powder and mix well til the sugar disolve. For stuffing you can also use jaggery. The stuffing is now ready.If you want you can use half of crumbeled cottage cheese & half of coconut.Or else you can use only cottage cheese (chena) also.


Step 3

In a kadai heat 1 cup of water .Add salt & sugar and let it boil.

When it start boiling keep the flame low & add the rice paste.

Stire it continiously on low flame so that no lumps will form & will not stick to the bottom .Initialy it will look like this .It will start thickening .


Keep stirring it .

Now the batter looks like a dough .

This is the right consistency we need . A dough like consistency . Switch off the flame & keep it aside for 5~10 minute to cool down .

Step 4

Wash your hand properly & apply some oil . Take a small portion of the mixture and make a smooth ball.

Flatten it by pressing it . Add a good amount of stuffing and again give it a round shape and slightly press it.


In this way prepare all dumplings

Step 5

Now boil some water in a steamer or idli maker.

Apply few drops of oil in the steamer plate or idli plate and place the dumplings.

Step 6

When water start boiling ,place the plate in the steamer .


Cover the lid and cook on medium flame for 10 minute .


After 10 minute switch off the flame. Now Sijha Manda is ready to be served .
