Sweet Corn Masala/Curry

A rich, creamy & delicious restaurant style sweet corn recipe
Sweet corn masala is a classic Indian curry with a blend of Indian spices in onion tomato gravy along with sweetcorn kernels. This can be eaten with roti/paratha/naan etc. This is a perfect combination of spices & sweetcorn, which can be easily prepared within 30~35 min and this can be great option for sweet corn lover.
Ingredients: (2~3 servings)
Sweet corn- 2 cups
Tomato-2 medium size
Onion- 1 medium size
Ginger: 1 inch chop
Garlic- 6~7 cloves
Green Chili- 1
Green cardamom- 4
Black pepper- 5~6
Cinnamon stick- 1 inch
Bay leaf- 1 number
Cashew- 6 numbers
Magaj (Watermelon seed) -1 tea spoon
Star anise – ½ (optional)
Cumin seed- 1/4th Tea spoon
Salt – As per taste
Turmeric – 1 pinch
Kashmiri red chili powder -1/2 Tea spoon
Milk – ½ cup
Cream – 2 TSP (optional)
KasooriMethi ( Dry Fenugreek leaf) for garnishing (optional)
Butter/ Oil for cooking
Heat a pan with some water & boil the sweet corn for 5 min
Drain the water with the help of a strainer& rinse it properly.
Heat a pan & add few drops of oil & butter, this prevents burning of butter.
Add cumin seed & let it crackle. Then add ginger, garlic, green chili, onion and sauté it for 2~3 sec. Then add chopped tomato & all whole spices & mix well. Add a pinch of salt to make the tomato soft. Cook in a low flame and make it slight soft. Then switch off the flame & keep it for few minute to make it slight cool.
With the help of a blender make a fine paste of it
Heat few drops of oil/butter in a pan, add the paste, turmeric powder, Kashmiri red chili powder to it & cook it for few minute on medium flame so that the raw smell if any of the paste will go away.
Add some water to the mixture & pour the water to the cooked masala
Add the boiled sweet corn, salt to taste & mix well.
Add ½ cup of milk with 2 TSP of cream.Fresh cream is optional, If you want to skip it you can. Cream help to give a rich taste to the curry, & mix well.
Cook it for few minute to make it a thick gravy.
Finally add some kasoori methi, switch off the flame & cover it for 5 min so that the flavor of kasoorimethi mix well with the curry.
Now your Sweet corn masala is ready to be served. At the time of serving you can add some extra butter. It’s totally optional.
