Sweet Corn Soup
A most popular vegetable soup
Soup is a liquid food ,generally served hot .Soup is basicaly prepared with vegetable or meat with some stock . Sweet corn soup is one of the mostly loved soup among all people .This sweet corn soup is prepared with some sweet corn & vegetables cooked in a mixture of sweet corn puree & vegetable stock .
Preparation Time: 5~10 min
Cooking Time: 15 min
Total time: 20~25 min
Finely choped carrot - 1 tbsp
Finely choped beans - 1 tbsp
Sweet corn - 2~2.5 tbsp to add in the soup & 3~3.5 tbsp for making puree .
Spring onion green - 1~1.5 tbsp
Spring onion bulb choped - 1~1.5 tbsp
Finely choped garlic - 1 tsp
Finely choped ginger - 1/2 tsp
Vinegar - 1/2~1tsp (can adjust as per taste)
Soy sauce - 1/4 tsp
Black pepper powder - 1 tsp or as per taste
Corn flour - 1~1.5 tsp
Salt to taste
Vegetable stock or water - 2 cup ( aprox 450 ml)
(For better taste try to add vegetable stock)
Chop all vegetables & keep it ready .
Make a smooth paste of 3~3.5 tbsp of corn & keep it aside .
In a kadai heat a small cube of butter
When it start mealting add choped ginger & garlic & saute for few second . No need to brown it .
Now add all choped vegetable excluding spring onion green & saute it for one more minute .
Now add vegetable stock & mix well
Add corn paste/puree & mix well .
Add black pepper powder,vinegar ,soy sauce ,salt & mix well. Let it boil for few minute .
Add 2 tbsp of water to the corn flour & make a slurry .Add the slurry to the soup & cook for few more minute. You can adjust the thickness as per your choice .
Now sweet corn soup is ready to be served .
