A must have ingredient for maximum soup,stew,casserole etc.
Vegetable stock/broth is a flavoured liquid base for making soup,sauce, stew etc. It is prepared by simmering vegetables & some aromatic ingredient in water for few time .

Cooking Time: 30~40 min
Total time: 45 min
Onion - 1 large
Garlic clove - 2~3 medium~large
Capsicum - 1/2
Carrot - 1 medium~large
Cauliflower florets - 4
Bay leaf - 2
Black pepper - 1/2 tsp
Spring onion - 2 sprig
Coriander stem - 1/2 hand full
Water - Aprox 1.5~2 ltr
Boil some water in a pan .
Roughly chop all vegetables . I prepared some carrot halwa ,so I had a hugh amount of peel carot skin & end part of carrot .Without westing them I used them for making stock.But for this you need good amount of it . here I have skin & end part of 1.5 kg carrot . Other wise add 1 medium~large carrot .
When water comes to a boil add everything to water .
Cover it & let it boil on low flame for 30~40 minute . You can also pressure cook it for 10~15 minute on low flame .
after 30~40 minute switch off the flame & let it cool.
Strain it & vegetable stock is now ready .
You can store it in refrigerator for 1 week .The colour will change very slight but there is no problem with it .You can see the difference in the picture.I prepared this at night & click the photo next day morning before making so yummy soup.
